Fried Calamari with Tartar Sauce

Ingredients

  • 300g. calamari –cut body into thick rings
  • 4-1/2 Cups Healthy Chef Soybean oil
  • 2 eggs, beaten
  • 2 Cups all-purpose flour
  • 2 Cups bread crumbs
  • 1 lemon wedge
  • 1 Tbsp. Healthy Chef Canola oil
  • 2 cups mayonnaise
  • 1/4 cup boiled egg (1 egg), minced
  • 2 tsp. capers
  • 1 tsp. shallots, minced
  • 1 Tbsp. lemon juice
  • 1/2 tsp lemon zest
  • ** salt and pepper to taste

Method

  1. Prepare for 3 large bowls with flour, beaten eggs, and bread crumbs.
  2. Season calamari rings with salt and pepper** and place them in flour mixture, toss around to thoroughly coat each ring.  Transfer calamari to a fine mesh strainer and gently shake off any excess flour back into the bowl.  Drench calamari rings into beaten eggs, and coat with bread crumbs, shake of any excess crumbs.
  3. Heat a deep frying pan with Healthy Chef Soybean oil over medium heat until it reaches 177 C (350 F), carefully add calamari rings in hot oil and fry until light golden brown.  Transfer fried calamari rings to paper-towel lined plate to drain and set aside.

Tatar sauce

  1. In a bowl, mix boil eggs, capers, shallot, lemon juice, and mayonnaise together season with salt and pepper**.   Lastly, glaze tartar sauce with Heathy Chef Canola oil and sprinkle with lemon zest.
  2. Place fried calamari and lemon wedges on a clean plate.  Sprinkle with salt.  Serve immediately with a side of tartar sauce.
