Pork Satay with Peanut sauce

Ingredients

  • Sliced pork tenderloin size 1.5inch 500 g
  • Roasted cumin ½ tbsp
  • Roasted coriander seed ½ tbsp
  • Turmeric powder 1 tbsp
  • Curry powder 1 tbsp
  • Sugar 2 tbsp
  • Salt 1tsp
  • Pepper 1 tsp
  • Coconut milk 150 g
  • Healthy Chef cooking oil 2 tbsp
  • Skewers
  • Fresh milk / coconut milk 150 g
  • Peanut Sauce ingredients:
  • Coconut milk 300 g
  • Musman Curry past 20 g
  • Red chili curry past 20 g
  • Palm sugar 50 g
  • Tamarind juice 3 tbsp
  • Ground peanuts 150 g
  • Sweet Dipping Sauce ingredients:
  • Vinegar 100 g
  • Sugar 50 g
  • Salt 1tsp
  • Water 100 g
  • Sliced cucumbers
  • Shredded Shallot
  • Red chili for decoration

Method

  1. Mix roasted coriander and roasted cumin to grin. Add turmeric powder, curry powder, sugar, salt, pepper, coconut milk and cooking oil together.
  2. Add sliced pork into the mix ingredients and let sliced pork absorbs the ingredients for a while. Leave it for 2 hrs.
  3. Make a sweet dipping sauce, mixing vinegar with sugar and salt. Stir everything on the pot with lower heat until melt well. Simmer for a while and set aside to cool.
  4. Add sliced cucumbers, sliced shallots, chili and peppers into the above sweet dipping sauce. 
  5. Make peanut sauce, adding musman curry past into the pot, add red curry paste, coconut milk, stirring well over with lower heat until mixed well. 
  6. Add roasted peanuts into the pot and stir well enough. Set aside.
  7. Take the marinated pork on the skewers. Soak them with coconut milk or fresh milk to grill. Grill the pork with lower heat until it well cooked.
  8. Ready to serve
