Heat the pan with Healthy Chef cooking oil and sliced shallots with medium heat. Add pork, palm sugar and fish sauce. Stir until the juice from pork start to come out. Stir for almost 10 minutes until the pork is dry or sugar turning thicker. Set aside.
In another pan, heat the pan with Healthy Chef cooking oil with medium heat. Add shrimp paste and stir until having a good smell. Add cooked rice and stir until shrimp paste mix well with rice. Set aside.
Pack the fried rice with shrimp paste in a small bowl and serving on a plate. Place sliced shallots, shredded green mango, fried dried shrimp, fried Chinese sausage, sliced egg, chili, long bean, and sweetened pork. Top with coriander and a piece of lime or lemon. Ready to serve.
