Rice with moist scrambled eggs

Ingredients

  • 2 of large Eggs
  • Water 1 Tbsp.
  • Fish sauce 1-2 tsp
  • Sugar 1-2 Tsp
  • Ground pepper ¼ Tsp.
  • Cooking oil 2 Tbsp

Method

  1. Heat the oil in a pan on medium low. 
  2. Crack 2 eggs in a wok. When the eggs begin to set, start stirring quickly, but do not let it break into small pieces. 
  3. Season with fish sauce and sugar and keep the heat on medium low, if the wok is too hot the eggs will cook too quickly. 
  4. Continue to scramble until cooked.  Ready to serve
