Deep Fry Eggplant with yellow chili

Ingredients

  • Chicken breast 200 g
  • Eggplant cut into bite sized 300 g
  • Salt 1 tsp
  • Picked basil leaves 1 cup
  • 3 cloves of garlic pounded together
  • Healthy Chef Cooking Oil 1 cup
  • Seasonings
  • Sugar 1 tsp
  • Fish sauce 1 tsp
  • Oyster sauce 1 tsp

Method

  1. Preheat the wok, add Healthy Chef Cooking oil and eggplant. Deep fry for a minute. 
  2. In another pan, preheat (low heat), add Healthy Chef Cooking Oil and chili and garlic. Stir for a minute.
  3. Add chicken into the pan with medium heat. Stir until the chicken is well cooked. 
  4. Add deep fried eggplant, fish sauce, oyster sauce, sugar, and add basil leaves before turning off the
