Fried Fish with Chili Paste

Ingredients

  • Sea bass 300-400 grams (or other fishes that available)
  • Chopped Bird’s eye chilli (green color) 10 pcs
  • Chopped Red chilli 10 pcs
  • Chopped garlic 5-8 cloves
  • Chopped Scallion ¼ cup
  • Crispy flour ½ cup (all purpose flour)
  • Healthy Chef Cooking Oil 1 cup
  • Oyster sauce 1 tbsp.
  • White soy sauce 1 tbsp.
  • Fish sauce 1 tbsp.
  • Sugar 1 tbsp.
  • Ground pepper ½ tsp.
  • Water 2-3 tbsp.
  • Healthy Chef Cooking Oil 2 tbsp.
  • Chinese cooking wine 1 tpsp. (additional)

Method

  1. Cut fish into pieces and set aside.
  2. Heat the wok or pan with Healthy Chef Cooking Oil with high heat.
  3. Dip the fish fillets into the all purpose flour or crispy flour bowl.
  4. Deep fried the fish fillets until turn to yellow color. Set aside.
  5. In another pan, heat the pan with Healthy Chef Cooking Oil with medium heat.
  6. Add chopped garlic and stir until turn a little yellow color. Add green chilli, red chilli and stir until well combined.
  7. Add deep fried fish fillets into the pan, add the rest of the ingredients such as Chinese cooking wine, oyster sauce, fish sauce and all.
  8. Gently well combined and turn off the heat. Add chopped scallion and ready to serve.
