Stir-fried Clams with Roasted Chili and Basil


  • Fresh Clams 500 g.
  • Italian basil 10 pcs.
  • Dry red chili 5 pcs.
  • Healthy Chef® canola oil 3 Tbsp.
  • For stir-fried sauce
  • Minced garlic 1 Tbsp.
  • Minced red Shallots 1 Tbsp.
  • Chopped dry red chili 1 Tbsp.
  • Dried shrimp 2 Tbsp.
  • Oyster sauce 1 Tbsp.
  • Fish sauce 2 tsp.
  • Palm sugar 1 Tbsp.
  • Tamarind concentrate 2 tsp.
  • Healthy Chef® canola oil 3 Tbsp.


  1. Heat Healthy Chef® canola oil to medium heat.in a pan and stir-fry the dried red chilies and move them around quickly.
  2. In the same pan, add minced garlic, minced red shallots, chopped dry red chili, dried shrimp, oyster sauce, fish sauce, palm sugar, and tamarind concentrate. Stir-fry until mix well. 
  3. Add the clams and stir-fry until they open up for 5 minutes. 
  4. Add Italian basil, dry red chili and serve on plate.
