Combine shrimp, cilantro root, peppercorn, garlic clove, sesame oil, salt, and soy sauce in the bowl of a food processor. Plus until extremely finely minces.
Spread mixture evenly over one side of each piece of bread. Coat with egg and white sesame seed.
Heat the Healthy Chef® soybean oil in a pot over medium heat.
Transfer half of toasts to the oil, shrimp side-down. Cook until golden brown, about 2 minutes, adjust flame as necessary to maintain heat.
Serve with sweet and sour sauce with fresh cucumber.
