Cleaned and tentacles, give your squid a nice rinse in water, slice into rings
In a wok or pan, bring 1 cup of water to a boil covered over high heat. Add the squid and blanch 20 seconds or until the squid turns opaque and curl. Drain well in a colander, shaking out all the excess water. Set the squid on paper towels and blot dry to remove excess moisture.
Pound garlic, chilies, and shrimp paste together until crushed. Set aside.
Heat the wok or pan with Healthy Chef Cooking Oil with over medium to high heat.
Add shrimp paste and stir for 10 seconds until the garlic starting to turn golden and you can smell the aroma of the shrimp paste
Add squid, chilli, and stir fried with high heat for about a minute. Once it starts to get dry, add a splash of water to get things moving.
Add season with oyster sauce, fish sauce, sugar and stir fried for another minute (don’t over cooked)
Toss in with the green onions, and immediately turn off the heat. Ready to serve with hot rice.
