  • 150 g. of cake flour
  • 35 g. of healthy chef cooking oil
  • 100 g. of syrup
  • ½ tsp of alkaline water
  • ¼ tsp of lime water
  • Durian paste or Black Sesame paste


  1. Whisk together the syrup, alkaline water and cooking oil in a large bowl until combined. 
  2. Add the cake flour, then stir until mix well. 
  3. Gently knead the dough until it comes together completely. 
  4. Roll about 1 tablespoon of the mooncake dough into a ball, then place between 2 pieces of parchment paper. 
  5. Place one of the durian paste or sesame paste balls in the center of the dough, shape the dough around it.
  6. Bake the mooncakes for 5 minutes with 160’c and then take it out.
  7. Lower the heat to 150’c and bake for more 5 minutes. 
  8. Set aside and let the mooncake cool down. Ready to serve.
