Thai Crispy Catfish and Green Mango Salad

Ingredients

  • 2 of Steamed catfish (no need to remove the tailbone out and take the skin out)
  • Fried peanuts 2 tbsp
  • Healthy Chef Cooking Oil for blended 2 tbsp
  • Lime juice 3 tbsp
  • Fish sauce 3 tbsp
  • Palm sugar 1 tbsp
  • Red chili
  • Green mango (sour taste)
  • Shredded shallot
  • Shredded carrot
  • Coriander
  • Healthy Chef Cooking Oil for Deep fry 2-3 cups

Method

  1. Take the steamed catfish to pound it thoroughly
  2. Mix cooking oil into the catfish 
  3. Heat the wok or pan with medium heat. Add catfish into the wok and swell the catfish all over to make it fluff up. 
  4. Once turn to golden color or pretty raft, try to push it in the middle of the pan. Make it look a pretty lump. Set aside.
  5. Make mango salad dressing, by add fish sauce, lime juice and palm sugar into the bowl. Stir until mix well. Add red chili, shredded mango, red onion and carrot. 
  6. Stir until all mix together.
  7. Take the deep-fried catfish into the plate and put green mango salad on top. 
  8. Ready to serve
