Roast Squid Stuffed with Green Curry Fried Rice
Ingredients
- Clean medium-sized squid 4 pcs.
- Japanese rice 3 cups.
- Minced garlic ½ cups.
- Minced basil 2 Tbsp.
- Green curry paste 3 Tbsp.
- Fish sauce 3 Tbsp.
- Sugar 1 ½ Tbsp.
- Healthy Chef® soybean oil 1 cup.
- Fresh basil 2-3 pcs.
- Pepper 2-3 pcs.
- Cayenne pepper 1-2 pcs.
- Fine-sliced cinnamon 1-2 pcs.
- Green curry paste 2Tbsp.
- Coconut milk 1 cup.
- Fish sauce 1 Tbsp.
- Sugar ½ Tbsp.
- Healthy Chef® soybean oil 3 Tbsp.
Method
- Heat the Healthy Chef® soybean oil on the pan.
- Stir fry garlic, green curry paste seasoning with fish sauce and sugar.
- Add Japanese rice and stir well.
- Mix basil and set aside.
- Cut and make a hole at the end of the squid for ventilation.
- Stuffed with fried rice. Tack on the squid with a toothpick.
- Roast squid with medium heat until done.
- Heat the Healthy Chef® soybean oil on the pan.
- Add curry paste, coconut milk, fish sauce and sugar then stir well.
- Serve squid with green curry sauce. Decorate with fresh basil, pepper and cinnamon.
