Deep Fried Red Tilapia with Hear

Ingredients

  • Red tilapia (cut into pieces) 220 g.
  • Salt ½ tsp.
  • Thai Chile paste 3 tbsp.
  • Finely chopped bird chili 6 pcs.
  • Finely chopped chili peppers 4 pcs.
  • Lemon juice 3 tbsp.
  • Fish sauce 2 tbsp.
  • Jiggery or palm sugar 1 ½ tbsp.
  • Cashew nuts ¼ cup.
  • Fried peanut ¼ cup.
  • Sliced lemongrass 4 pcs.
  • Thin sliced shallots 3 pcs.
  • Finely chopped kaffir lime leaves 5 pcs.
  • Cool mint 3 branches.
  • Healthy Chef® soybean oil 2 cups.

Method

  1. Dry the fish them mix with salt. 
  2. Heat the oil with medium heat and fry the fish on medium heat until it turns golden brown.
  3. Set aside to drain. Mix Thai Chili paste, fish sauce, palm sugar together.
  4. Stir until sugar is dissolved. Stir fried chili, shallots, lemongrass, fried fish, cashew nuts kaffir lime leaves and mint leaves together. 
  5. Serve with fresh vegetable such as cabbage and lettuce.
