3-1/2 Tbsp. Healthy Chef Canola oil -salad dressing
1-1/2 Tbsp. balsamic vinegar
** salt and peppered to taste
Marinate chicken thighs with sea salt, black pepper and Healthy Chef Soybean oil in a mixing bowl. Rub the ingredients together to make sure the chicken thighs are well coated. Cover and let it rest in refrigerator for 20 minutes.
Heat Healthy Chef Soybean Oil in a sauté pan over medium heat until the oil beginning to smoke, by using a pair of tongs, slowly and carefully place marinated chicken thighs skin side down into hot pan for 5 to 7 minutes until skins become crispy then turn the flesh side down for another 5 minutes or until done.
In making the salsa, pour Healthy Chef Canola oil into a small mixing bowl along with balsamic vinegar, basil, garlic, and chopped tomatoes mix well. Season with salt and pepper**
Transfer chicken thighs to a serving plate with a small bowl of tomato salsa. Serve immediately.
